Impromptu BBQ. 9th March 2014.


Well the gorgeous spring weather came as a surprise this weekend and upon walking the dog for two hours on sunday morning, we decided to have an impromptu BBQ.

Normally my BBQ's are spectacular with many dishes on offer, however, this was not planned so I had to make do with what I had in the house.

I decided to put some rather small potatoes into the oven to bake and the bbq would consist of Sausages, my home made spicy burgers and cowboy beans.

So here it is .
Place some good quality beef mince in a bowl. Add a whole onion, finely chopped.





Next, finely chop 2 cloves of garlic, approx 2cm of fres ginger and two fresh green chillis, then add these to the meat.


Add one teaspoon of chilli powder and one of mixed spice.

Next, add salt and black pepper.

Mix everything together and knead with clean hands.

Grab a small portion of the mixture, roll into a ball and then flatten with the palm of your hand, repeat until you have used up all of the mixture.


Place all your ready to cook burgers on a plate or tray and cook on a hot bbq fir about 5-7 mins each side. The smell will make your mouth water as these burgers are delicious.

TIPS:

You can put less chilli powder i.e. half a teaspoon if you do not like your food so hot.
The way the burger mixture holds together without falling apart is really dependant on the quality of the meat.
If your mixture is not holding together, you can always add a raw beaten egg to the mixture to bind it or sometimes I sprinkle it with rice flour ( this also give a nice crispy coating).

Cowboy Beans

Get a large tin of baked beans ( I used Heinz because they are gluten free).
Get a tin of pineapple chunks (or rings which can be cut into chunks)
Open the beans and pour into a large bowl,
Drain the juice from the pineapple tin and add the pineapple chunks to the beans.
Add a heaped teaspoon of chilli powder ( yes, we like our hot food in this house).
Stir together and warm n a pan or in the microwave.

I would normall make my own chiacken kebabs and potato salad but as I said it was impromptu and i had to make do. Hope you enjoy, many more Bbq's to come this year :-)

Gluten Free Chicken Stir Fry



Stir frys are a quick and easy way to enjoy a good meal.
When I was first diagnosed with Coeliac condition I thought stir frys were out of the question for me from then on as I knew that Soya sauce and noodles both contain Wheat.

However, things have moved on a lot and gluten free soya sauce and rice noodles are now available so I have devised my own stir fry recipe. These products can be found in various health food stores now but since I moved to Central Europe they became inaccessible to me until I discovered online ordering, this has made me very happy.

I won't include measurements as it is up to every individual how much you want to make, be it just for the Coeliac in your family or if everyone will eat your meal. In my case, my whole family like to eat my meals. 

Chopped Chicken breasts
Chopped red/green/yellow peppers (capsicum)
Mange tout ( green beans miniature baby corn) optional...
Steamed broccoli spears
Minced garlic
Chopped red chillies
Salt 
Pepper
Olive oil

1. Cut chicken into thin strips and fry in a little olive oil, add salt and pepper

2. Add chopped red chillis 


3. In a seperate pan fry the chopped peppers and steamed brocolli in a little olive oil.


4. Add the fried vegetables to the chicken and add the rice noodles

4. Add minced garlic to taste,  a few dashes of sesame oil and plenty of Gluten free soya sauce (link above)


5. Serve and enjoy!

Gluten free quick and easy salad

This is a very quick and easy salad to rustle up for lunch if you are in a hurry.

The salad is made up of lettuce, 
chopped cucumber
chopped cherry tomatoes,
 Sliced ham
chunks of red cheddar
topped with chickpeas.

Roasted butternut squash and vegetables

Easy Gluten free lunch for a lazy sunday.

Chop butternut squash into chunk size pieces, place in a glass or oven proof dish, sprinke with cinammon and olive oil, bake for thirty minutes, delicious! This can also be blended up afterwards into a delicious winter soup.

Chop green and red peppers, red onion and courgettes, place in an oven proof dish, add cherry tomatoes add a good helping of seasalt and olive oil then bake in the oven for 35 mins, makes a delicious side to any meal or just as a snack served with fresh houmous.
